Beef Cheddar One Pot (Print Version)

# Ingredients:

01 - 2 cups shredded cheddar cheese
02 - 8 oz pasta (penne or rotini)
03 - 1 small onion, diced
04 - 1 tbsp olive oil
05 - 1 cup milk
06 - Salt and pepper, enough to season
07 - 2 cups beef broth
08 - 1 packet (1 oz) ranch seasoning mix
09 - 1 lb ground beef

# Instructions:

01 - Warm up olive oil in a big pot on medium heat. Toss in onions and ground beef, cooking until the onions soften and the beef no longer looks pink. Get rid of the extra fat.
02 - Mix in the pasta, milk, ranch packet, and beef broth. Turn the heat up to get it boiling, then lower it to a slow simmer and cover. Give it a stir now and then, cooking for about 10-12 minutes or until the pasta softens.
03 - When done cooking, take off the heat and stir in the cheddar cheese until it's smooth and gooey.
04 - Sprinkle salt and pepper to suit your taste. Dish it out while it’s warm.

# Notes:

01 - Sprinkle some fresh parsley or green onions for extra flavor
02 - You can swap beef with ground turkey or chicken
03 - Cheese amount can be tweaked to your liking
