Carrot Cheesecake Bars (Print Version)

# Ingredients:

→ Carrot Cake Layer

01 - 1/2 cup brown sugar, packed
02 - 1/2 teaspoon baking powder
03 - 1 1/2 teaspoons ground cinnamon
04 - 1/4 teaspoon salt
05 - 1 teaspoon vanilla extract
06 - 1 cup freshly grated carrots
07 - 2 large eggs
08 - 1 teaspoon baking soda
09 - 1/2 teaspoon ground nutmeg
10 - 1 1/2 cups plain flour
11 - 1/2 cup white sugar
12 - 1/2 cup vegetable oil

→ Cheesecake Layer

13 - 8 ounces softened cream cheese
14 - 1 teaspoon vanilla extract
15 - 1/2 cup sugar
16 - 1 large egg

# Instructions:

01 - Set your oven to 350°F and let it heat up. Line a square 9x9 pan with parchment for easy removal.
02 - Stir oil and both sugars together. Crack in eggs and mix in vanilla. Mix dry ingredients in another bowl, then slowly combine both mixtures. Add grated carrots last and fold gently.
03 - Using an electric mixer, blend cream cheese, sugar, egg, and vanilla until it's creamy and lump-free.
04 - Pour half the carrot mixture into your pan, then add most of the cheesecake mixture. Spread the rest of the carrot batter and drizzle remaining cheesecake on top. Use a knife to swirl it together.
05 - Bake for 30-35 minutes until a toothpick inserted in the center is clean. Cover with foil if it starts to brown too much during the final 5-10 minutes.
