Marry Me Chicken Soup (Print Version)

# Ingredients:

01 - 3 garlic cloves, finely chopped.
02 - ¼ cup diced sun-dried tomatoes.
03 - ½ cup diced onions.
04 - ¼ cup flour.
05 - 2 teaspoons of Italian herb mix.
06 - ½ cup chopped celery.
07 - 6 ounces of small pasta shells or similar.
08 - Salt and pepper, adjust as needed.
09 - ½ cup diced carrots.
10 - 6 to 8 cups of chicken stock.
11 - 1 teaspoon olive oil for cooking.
12 - 3 cups fresh spinach leaves.
13 - 1½ pounds of chicken (thighs or breasts), cut into 1-inch chunks.
14 - 2 tablespoons optional tomato paste.
15 - 1 cup parmesan cheese, grated finely.
16 - 1 cup heavy whipping cream.

# Instructions:

01 - Drizzle oil into a pot heated on medium-high. Toss in the chicken and sprinkle with seasoning, salt, and pepper. Let it cook for about 5 minutes until browned.
02 - Stir in carrots, celery, garlic, onions, and the chopped tomatoes. Cook for around 4 minutes until they soften.
03 - Mix in flour and stir thoroughly. Optional: add tomato paste at this step. Gradually pour in the broth while stirring to ensure it's smooth.
04 - Once boiling, add pasta shells and seasonings. Cover it up, let it simmer for 20 minutes, ensuring the pasta gets tender and chicken finishes cooking.
05 - Blend in the spinach, cream, and cheese. Let it simmer for another 5 minutes. Taste it and tweak seasoning, if necessary.

01 - Start with less stock and add more if needed.
02 - Use cooked rotisserie chicken as a shortcut.
03 - Cook the pasta separately, if preferred.
04 - Can also be made using a slow cooker.
