Healing Chicken Bowl (Print Version)

# Ingredients:

01 - 2 boneless, skinless chicken breasts.
02 - 2 tablespoons olive oil, extra virgin.
03 - 3 sticks of celery, sliced.
04 - 4 medium carrots, sliced after peeling.
05 - 3 parsnips, peeled and cut into slices.
06 - 1 leek, rinsed, halved, and sliced thin.
07 - ½ onion, chopped small.
08 - 4 minced garlic cloves.
09 - 2 sprigs of tarragon, fresh.
10 - 2 sprigs of thyme, fresh.
11 - 1 dried bay leaf.
12 - ½ teaspoon ground pepper.
13 - 1 teaspoon coarse salt.
14 - ¼ cup chopped parsley.
15 - 5 cups chicken broth, low sodium.

# Instructions:

01 - Warm oil in a large pot. Toss in onion, carrots, leek, celery, and parsnips. Stir and let them soften for 4-5 minutes. Add garlic, sprinkle with salt and pepper, then cook another minute.
02 - Toss in chicken, thyme, tarragon, bay leaf, and add the broth. Bring to a boil, then reduce the heat and let it simmer, covered, for about 15 minutes until the chicken is done.
03 - Pull chicken out of the pot. Use forks or a mixer to tear it into tiny pieces. Put it back in the pot and cook lightly for 1-2 more minutes.
04 - Pick out bay leaf and any herb stems. Mix in fresh parsley at the end and serve it warm.
