Mango Strawberry Cupcakes (Print Version)

# Ingredients:

→ Cupcake Batter

01 - 1 tsp mango extract
02 - Yellow food coloring gel (to mimic mango)
03 - 1 tsp strawberry essence
04 - Pink and red food coloring gels (to mimic strawberry)
05 - 1 tsp vanilla essence
06 - 2 tbsp sour cream or Greek-style yogurt
07 - ½ cup neutral oil (like vegetable oil)
08 - 1 ½ cups whole milk
09 - 2 large eggs, beaten
10 - ½ cup soft, unsalted butter
11 - ½ tsp fine sea salt
12 - 3 tsp baking powder
13 - 1 ¼ cups superfine sugar
14 - 3 ½ cups plain flour

→ Buttercream Frosting

15 - Strawberry and mango flavor extracts
16 - Yellow gel coloring (for mango tone)
17 - Pink and red gel coloring (for strawberry tone)
18 - A batch of either Swiss or American Meringue Buttercream

→ Toppings

19 - 10 strawberries, split in half vertically
20 - 40 small slices of lime from 10 limes
21 - 1 cup white sugar for decorating rims

# Instructions:

01 - Set your oven to 140°C (275°F) if you're using a fan, or 160°C (320°F) if it's a standard one. Put liners into your two cupcake tins.
02 - Add the flour, superfine sugar, baking powder, and fine sea salt to a big bowl. Toss in the soft butter and blend until it's crumbly, like damp sand.
03 - In another bowl, combine the eggs, milk, oil, sour cream or yogurt, and vanilla. Stir until the mixture looks smooth and uniform.
04 - Pour the wet mixture into the bowl with the dry, and gently stir until combined. Stop as soon as the batter is smooth to avoid overmixing.
05 - Split the batter into two bowls. Mix the pink and red coloring gels, along with strawberry flavoring, into one. Stir the yellow gel and mango essence into the other until both are vibrant.
06 - Spoon or pipe the two batters into your liners, alternating to create swirls of strawberry and mango patterns.
07 - Put the tins into the oven. Bake for 40 to 50 minutes, and check if they're done by inserting a toothpick. Let them cool completely before adding frosting.
