Nutella Strawberry Cupcakes (Print Version)

# Ingredients:

→ Cupcakes

01 - 1 cup sugar (200g)
02 - 1 3/4 cups cake flour (207g), leveled and spooned
03 - 1/2 cup room-temperature unsalted butter (113g)
04 - 3/4 teaspoon baking powder
05 - 1/4 teaspoon salt
06 - 1/4 teaspoon baking soda
07 - 1/2 cup whole milk (120ml), at room temp
08 - 3 large egg whites, brought to room temperature
09 - 1/2 cup sour cream or plain yogurt (120g), also at room temp
10 - 1 1/2 teaspoons pure vanilla extract

→ Filling

11 - 1/3 cup Nutella (100g)

→ Swirled Buttercream

12 - 1/3 cup heavy cream or regular milk (80ml)
13 - 1 teaspoon real vanilla extract
14 - 1/3 cup Nutella (100g)
15 - 6 cups powdered sugar (720g)
16 - 1 cup freeze-dried strawberries (25g)
17 - 1/8 teaspoon salt
18 - 1 1/2 cups room-temperature unsalted butter (340g)

# Instructions:

01 - Set the oven to 350°F (177°C) and line a 12-cup muffin tin with paper cupcake liners. Use a few extra liners in a second tin for the leftover batter.
02 - In a bowl, stir together cake flour, salt, baking soda, and baking powder. Put it to the side for later.
03 - Whip up the butter and sugar until soft and fluffy. Drop in the egg whites, then add the sour cream and vanilla. Gently fold in the dry ingredients and milk until just combined.
04 - Spoon the batter into the liners, filling each about two-thirds full. Bake for 20-22 minutes, or until a toothpick comes out clean. Let the cupcakes cool all the way.
05 - Cut out the middle of each cupcake and spoon Nutella into the center. Place the removed cake piece back on top.
06 - Grind the freeze-dried strawberries into a fine powder. Whip the butter, then add powdered sugar, cream, vanilla, and salt. Divide the frosting in half, blending Nutella into one batch while mixing the strawberry powder into the other.
07 - Fill a piping bag with both frostings side by side using a 1M piping tip. Create swirls on each cupcake. If you'd like, add extras like chocolate shapes or fresh strawberries on top.

# Notes:

01 - Starting with room-temperature ingredients makes mixing go smoothly.
02 - No Nutella? Try using chocolate ganache as a nut-free option.
03 - Stick to freeze-dried strawberries for frosting. Chewy dried ones won't work here.
