Coat an 8x8-inch dish with non-stick spray.

Slice or tear the croissants into chunks. Pack them snugly into the dish, leaving no gaps.

In a large bowl or measuring jug, mix eggs, sugar, milk, and vanilla until smooth. Pour this over the croissants. Scatter the chocolate chips on top, then lightly press to make sure everything soaks up the liquid.

Allow it to rest for an hour at room temperature or put it in the fridge overnight. Occasionally push everything down to ensure good soaking.

Set your oven to 350°F. Remove the pan from the fridge and take off any covering. Add foil on top and bake for 40 to 45 minutes until firm.

Serve hot with maple syrup or powdered sugar sprinkled over it.
