Set the oven temperature to 450°F (230°C) and let it heat up.

Brown the ground beef in a skillet over medium-high heat. Add taco seasoning and enchilada sauce, stir well, let it cook a little longer, then turn off the heat.

Dampen a paper towel, wrap the tortillas in it, and heat them for 30 to 60 seconds in the microwave until they’re soft.

Spread olive oil on one side of each tortilla. Lay them out, oil side down, and layer 2 tablespoons of cheese, 1/4 cup of the beef mixture, and another 2 tablespoons of cheese on one half. Fold the tortilla to form a semi-circle.

Place the folded tacos in a single layer on a baking tray. Bake for about 16 minutes until they’re crisp and golden brown.

Wait for 3 minutes for the tacos to cool slightly, then serve with your favorite toppings.
