Baked Beef Tacos (Print Version)

# Ingredients:

01 - 10 small corn tortillas
02 - 1 tablespoon of olive oil
03 - 2 and a half cups of Oaxaca cheese, Mexican blend, or Monterey Jack
04 - 3/4 cup of enchilada sauce
05 - 1 packet of taco seasoning mix
06 - 1 pound of 90% lean ground beef

08 - Lime wedges
09 - Guacamole
10 - Pickled onions
11 - Hot sauce
12 - Sour cream

# Instructions:

01 - Set the oven temperature to 450°F (230°C) and let it heat up.
02 - Brown the ground beef in a skillet over medium-high heat. Add taco seasoning and enchilada sauce, stir well, let it cook a little longer, then turn off the heat.
03 - Dampen a paper towel, wrap the tortillas in it, and heat them for 30 to 60 seconds in the microwave until they’re soft.
04 - Spread olive oil on one side of each tortilla. Lay them out, oil side down, and layer 2 tablespoons of cheese, 1/4 cup of the beef mixture, and another 2 tablespoons of cheese on one half. Fold the tortilla to form a semi-circle.
05 - Place the folded tacos in a single layer on a baking tray. Bake for about 16 minutes until they’re crisp and golden brown.
06 - Wait for 3 minutes for the tacos to cool slightly, then serve with your favorite toppings.

# Notes:

01 - Heat tortillas properly to make them easy to fold without tearing.
02 - A ceramic or nonstick baking tray works best to avoid having the tacos stick.
03 - If it helps, you can hold the folded tacos in place with toothpicks while they bake.
