Gluten-Free Banana Loaf (Print Version)

01 - 1½ cups gluten-free all-purpose flour
02 - 1 large egg, lightly beaten
03 - 3 to 4 soft bananas, mashed (about 1½ cups)
04 - ½ teaspoon salt
05 - ¾ teaspoon baking powder
06 - ⅓ cup melted unsalted butter
07 - ¾ cup white sugar
08 - ¾ teaspoon baking soda
09 - 1 teaspoon vanilla extract

# Instructions:

01 - Turn your oven on to 350°F and generously coat your 8x4-inch pan with nonstick spray.
02 - In a big bowl, toss together your bananas, sugar, egg, butter, and vanilla.
03 - In another smaller bowl, stir your flour, baking soda, baking powder, and salt until blended.
04 - Pour the dry mix into the wet mix, stirring until just combined. Some banana chunks in the batter are okay.
05 - Transfer the batter to your loaf pan, making sure it's spread evenly. Bake for 50 to 60 minutes, or until a toothpick comes out clean.
06 - Let it sit in the pan on a wire rack for 15 minutes. Then carefully take it out and let it cool completely before slicing.

# Notes:

01 - Super ripe bananas with spots work best for extra sweetness.
02 - Don't mash the bananas too much; a few chunks add texture.
03 - Check that all ingredients are gluten-free certified.
