Turn your oven on to 350°F and generously coat your 8x4-inch pan with nonstick spray.

In a big bowl, toss together your bananas, sugar, egg, butter, and vanilla.

In another smaller bowl, stir your flour, baking soda, baking powder, and salt until blended.

Pour the dry mix into the wet mix, stirring until just combined. Some banana chunks in the batter are okay.

Transfer the batter to your loaf pan, making sure it's spread evenly. Bake for 50 to 60 minutes, or until a toothpick comes out clean.

Let it sit in the pan on a wire rack for 15 minutes. Then carefully take it out and let it cool completely before slicing.
