Zucchini Banana Oat Bread (Print Version)

# Ingredients:

→ Dry Ingredients

01 - 1 cup oats
02 - ½ teaspoon salt
03 - 1 teaspoon baking powder
04 - 2 teaspoons ground cinnamon
05 - 1½ cups all-purpose flour
06 - 1 cup granulated sugar
07 - 1 teaspoon baking soda

→ Wet Ingredients

08 - 2 ripe bananas, mashed
09 - 3 cups shredded zucchini
10 - 2 teaspoons vanilla
11 - 1 cup canola oil
12 - 2 large eggs

# Instructions:

01 - Set the oven to 350°F. Get your pans ready—use one big loaf pan or three small ones.
02 - Stir together oats, flour, baking soda, salt, cinnamon, baking powder, and sugar in a large mixing bowl.
03 - In a smaller bowl, whisk together eggs, vanilla, oil, mashed bananas, and sugar.
04 - Pour the wet mixture into the dry ingredients, and stir by hand. Add the zucchini in and gently mix everything together.
05 - Pop it in the oven and bake for 35 to 45 minutes. It's done when a toothpick comes out clean, and the bread pulls slightly from the edges of the pan.
