Beef Barbacoa Wrap (Print Version)

# Ingredients:

→ Rice

01 - 1 lime
02 - 1/4 cup cilantro, chopped small
03 - 1 cup jasmine rice

→ Burrito Base

04 - 4 large flour tortillas, burrito size
05 - 1 cup rinsed and drained black beans
06 - 16 ounces of slow-cooked beef barbacoa

→ Toppings

07 - 1 cup shredded lettuce (romaine)
08 - 1 cup mixed shredded cheese
09 - 1/4 cup creamy guacamole
10 - 1/2 cup fresh pico de gallo
11 - 1/4 cup sour cream

# Instructions:

01 - Follow the instructions on the rice package to cook. Once that's ready, add lime juice and the cilantro, then mix it up.
02 - Toss the beef barbacoa into a skillet on medium. Let it sit for 3-5 minutes, then stir and cook another 2-3 minutes till hot.
03 - Cover tortillas with a damp cloth, pop them in the microwave for 30 to 60 seconds until soft, or heat each side in a skillet for half a minute.
04 - Spread the rice, beans, barbacoa, sour cream, guac, pico, cheese, and lettuce over each tortilla. Build your layers however you like.
05 - Fold the sides of the tortilla over the goodies, roll them tightly, and place them seam-down. Slice or wrap them in foil to serve.
