Follow the instructions on the rice package to cook. Once that's ready, add lime juice and the cilantro, then mix it up.

Toss the beef barbacoa into a skillet on medium. Let it sit for 3-5 minutes, then stir and cook another 2-3 minutes till hot.

Cover tortillas with a damp cloth, pop them in the microwave for 30 to 60 seconds until soft, or heat each side in a skillet for half a minute.

Spread the rice, beans, barbacoa, sour cream, guac, pico, cheese, and lettuce over each tortilla. Build your layers however you like.

Fold the sides of the tortilla over the goodies, roll them tightly, and place them seam-down. Slice or wrap them in foil to serve.
