# Ingredients:

01 - 3 cups long grain rice (cooked, about 2 portions or 200 grams)
02 - 150 grams peeled prawns (deveined)
03 - 50 grams green peas (roughly half a cup)
04 - 1 diced carrot (small cubes)
05 - Half an onion, finely chopped
06 - 2 garlic cloves, minced
07 - 2 eggs, whisked with a pinch of salt
08 - 100 grams Char Siu (BBQ pork, chicken, or other cooked meat, cut small)
09 - 2-3 thinly sliced spring onions
10 - 2-3 tablespoons neutral-tasting oil

→ Prawn Seasoning

11 - 1 teaspoon soy sauce (light or regular)
12 - 1 teaspoon rice wine (Chinese Shao Xing)
13 - 1 teaspoon starch (cornstarch or potato starch works)
14 - A pinch of white or black pepper

→ Flavor Boosters

15 - 2 tablespoons soy sauce (light or regular)
16 - Half a teaspoon of white pepper (or swap for black)
17 - 1 teaspoon toasted sesame oil
18 - 1 teaspoon chicken or bouillon powder (or MSG)

# Instructions:

01 - Use your fingers or a spoon to gently separate the grains. Fix any clumps so the rice isn't sticky.
02 - Slice up the BBQ meat, dice the veggies, and prep everything according to the instructions.
03 - Coat the prawns in a mix of soy sauce, pepper, starch, and Shao Xing rice wine. Then leave it to sit for a little while.
04 - Warm up your wok (or a big pan) on medium-high heat. Add oil, toss in your onion bits first, and quickly follow with the minced garlic. Shortly after, throw in your diced carrots.
05 - Cook the prawns for 1-2 minutes and push them aside. Add a touch more oil, pour in the egg mix, let it set briefly, then scramble it into small chunks.
06 - Drop in the green peas with the BBQ meat and keep stir-frying for a bit.
07 - Toss in the rice plus all the seasoning (soy sauce, chicken powder, sesame oil, and pepper). Stir it together and cook for a quick 1-2 minutes.
08 - Stir in the sliced spring onions, give it a brief mix, and take it off the heat. It's ready to serve hot!

01 - Cold, day-old rice is perfect for this dish because it won’t get soggy.
02 - Make sure everything is chopped, ready, and prepped beforehand since stir-frying happens fast.
03 - If you don’t have Char Siu, swap it with any BBQ or cooked meat, like chicken or lamb.
04 - For a veggie-friendly version, skip the meat and prawns, and add tofu or more veggies instead.
