Blueberry Banana Bread (Print Version)

# Ingredients:

01 - ¾ teaspoon baking soda
02 - 2 large eggs, at room temp
03 - 4 super ripe bananas, mashed (about 2 cups)
04 - ¼ cup (57.5g) sour cream, not cold
05 - 2 cups (250g) plain flour
06 - 1 teaspoon vanilla essence
07 - ¾ cup (150g) white sugar
08 - 1½ cups (222g) fresh blueberries, split
09 - ½ teaspoon kosher salt
10 - 3 tablespoons unsalted butter, already melted
11 - 3 tablespoons vegetable oil

# Instructions:

01 - Set your oven to 350°F. Line a 9x5 pan with parchment and spritz with nonstick spray.
02 - In a big bowl, combine flour, sugar, salt, and baking soda with a whisk.
03 - In another bowl, mash bananas up well. Add in eggs, sour cream, oil, melted butter, and vanilla. Stir to combine.
04 - Slowly mix the dry stuff into the wet banana mix. Fold in a cup of blueberries gently.
05 - Pour batter into the pan and sprinkle the top with the leftover blueberries. Bake 75 to 78 minutes. Check with a toothpick—it should come out mostly clean.
06 - Let it rest in the pan for 20 minutes, then pop it out and let it cool fully.
