Blueberry Vegan Bites (Print Version)

# Ingredients:

→ Dry Mix

01 - 1/8 teaspoon of salt
02 - 1/2 teaspoon of baking powder
03 - 135 grams (1 cup) of plain flour

→ Wet and Sweet Options

04 - 76 grams (1/3 cup) softened, dairy-free butter
05 - 90 grams (1/3 cup + 1 tbsp) regular sugar
06 - 80 grams (1/3 cup) frozen blueberries, thawed
07 - 70 grams (1/2 cup) crushed white chocolate chunks

# Instructions:

01 - Set your oven to 400°F (200°C) and give it a few minutes to heat up.
02 - Stir together the flour, salt, and baking powder in a small mixing bowl.
03 - Warm the frozen blueberries on the stovetop for a few minutes, or microwave for about 30 seconds, till soft. Let them cool briefly.
04 - Beat the sugar and butter until they turn fluffy. Add the cooled blueberries and mix till smooth and everything is blended well.
05 - Slowly combine the dry mix with your wet mix. Toss in the white chocolate pieces. Let the dough chill in the freezer for 30 minutes.
06 - Roll into 12 equal pieces and bake on a sheet at 400°F for 10-13 minutes, watching for light browning on the edges. Let sit for at least 5 minutes on a rack.
