California Burrito Style (Print Version)

# Ingredients:

→ Base

01 - 1 pineapple, peeled and cut into slices (optional)
02 - 8-10 large-sized tortillas
03 - 2-3 cups shredded cheese (Mexican-style, cheddar, or pepper jack)
04 - 1 batch of carne asada
05 - 1 batch of roasted salsa (store-bought works too)
06 - 1 batch of seasoned street fries

→ Avocado Crema

07 - 2 big, ripe avocados
08 - 1/4 cup mayo
09 - 1 cup sour cream
10 - 2 tbsp freshly squeezed lime juice
11 - 1/2 tsp garlic powder
12 - 1/2 tsp ground cumin
13 - 1/2 tsp salt

# Instructions:

01 - Whip up the avocado crema until smooth. Start marinating the carne asada. Get those seasoned fries ready to go.
02 - Cook the pineapple for 6-8 minutes per side, giving it a nice char. Follow the carne asada recipe for grilling instructions.
03 - Heat tortillas in a 350°F oven for around 10 minutes. Wrapping them in foil keeps them soft.
04 - Place the carne asada, fries, shredded cheese, salsa, a dollop of avocado crema, and pineapple in the middle of a tortilla. Fold it up burrito-style.
05 - To crisp them up, cook the burritos in a skillet with a bit of oil on medium-high heat until golden and crunchy.

# Notes:

01 - Swap avocado crema for guacamole and sour cream if preferred
02 - Freeze for up to 3 months without issues
03 - Reheat quickly in the microwave or oven
