Caramel Apple Icebox (Print Version)

# Ingredients:

→ Cream Cheese Mix

01 - 2 (8-ounce) blocks of softened cream cheese
02 - 1 3/4 cups heavy cream, chilled
03 - Juice from half a lemon (2 teaspoons)
04 - 2/3 cup sugar
05 - Packed 1/3 cup of light brown sugar
06 - 2 teaspoons cinnamon, ground
07 - 1 1/2 teaspoons vanilla
08 - A pinch of kosher salt (1/2 teaspoon)

→ Assembly

09 - 1 can (21 ounces) of apple pie filling
10 - 15 to 16 graham cracker sheets (8 to 8 1/2 ounces total)
11 - 3/4 cup of caramel sauce

→ Caramel Cream Topping

12 - 3/4 cup of chilled heavy cream
13 - 1/4 cup caramel sauce
14 - Optional: A sprinkle of ground cinnamon on top

# Instructions:

01 - Start by whipping the chilled cream until soft peaks form. Mix the cream cheese with sugars, cinnamon, vanilla, salt, and lemon juice until airy. Gently fold the whipped cream into this mixture in two parts.
02 - Use kitchen scissors to cut the apple pie filling into small bits, around 1/2 inch or less.
03 - In an 8-inch square dish, line up graham crackers, then caramel, cream cheese mix, and apple bits. Keep adding layers and finish with graham crackers topped with the last of the cream cheese mix.
04 - Cover the dish and let it chill for at least 6 hours or even overnight, letting the crackers soften up.
05 - Beat the cold cream until it thickens, then add caramel sauce and whip to stiff peaks.
06 - Spread the caramel-flavored cream on top, make swirls if you want, and sprinkle cinnamon for a little extra flair.
