Cheesecake Fluff Bites (Print Version)

# Ingredients:

→ Sweet Potatoes Base

01 - 2 medium sweet potatoes
02 - A little olive oil for coating
03 - Season with salt and pepper as you like

→ Taco Meat Filling

04 - 1 pound of ground beef
05 - Half of a white onion, diced small
06 - 2 minced garlic cloves
07 - One 14.5-ounce can of fire-roasted tomatoes (don’t drain)
08 - 1 tablespoon of chili powder
09 - 1 teaspoon of ground cumin
10 - 1 teaspoon smoked paprika
11 - Half a teaspoon onion powder
12 - Half a teaspoon garlic powder
13 - Half a teaspoon of fine salt
14 - Half a teaspoon black pepper

→ Extras to Add On

15 - Homemade guacamole
16 - Grated cheddar cheese
17 - Fresh pico de gallo
18 - Smooth sour cream

# Instructions:

01 - Turn on your oven to 425°F. Cover a baking tray with parchment. Rinse off potatoes, dry them, and poke a few small holes. Massage some oil on them and sprinkle with salt and pepper.
02 - Pop them in the oven for 40 to 45 minutes. They're done when the inside is soft enough to mash.
03 - Warm a bit of olive oil in a pan over medium heat. Toss in the garlic and onion and cook until they soften up.
04 - Add the beef along with your spices and cook 3–4 minutes until browned. Pour in the tomatoes and simmer for 5–7 minutes to let the liquid cook down.
05 - Cut the potatoes down the middle and fluff the insides using a fork. Pile on the taco filling and any extras you like.
