Stir together the flour, cocoa powder, salt, sugar, and baking soda until combined.

Pour in the hot coffee or water, the oil, vinegar, and vanilla. Mix just till everything's smooth—don't overdo it.

Spread the batter into the pans evenly. Bake about 30 minutes, and it’s done when a toothpick comes out clean.

After 5 minutes, move cakes from pans to a rack. Once they’re completely cool, add chocolate frosting and cherries if you'd like.
