Winter Chopped (Print Version)

# Ingredients:

→ Dressing

01 - 1/4 tsp black pepper
02 - 1/4 tsp kosher salt
03 - 1/4 cup olive oil (extra virgin)
04 - 1/2 tsp honey
05 - 1 1/2 tsp Dijon mustard
06 - 1/4 tsp garlic powder
07 - 2 tbsp balsamic vinegar

→ Salad

08 - 2 cups shredded rotisserie chicken
09 - 1/2 cup diced red onion
10 - 6 cups chopped romaine lettuce
11 - 1/2 cup pomegranate arils
12 - 1 medium Honeycrisp apple, cut into small pieces
13 - 1/2 cup dried cranberries
14 - 1/2 cup crumbled feta cheese
15 - 1/2 cup roughly chopped candied pecans

# Instructions:

01 - Mix together olive oil, balsamic vinegar, mustard, garlic powder, honey, salt, and pepper in a bowl. Leave it aside for later.
02 - Toss lettuce, chicken, apple, onion, pecans, cranberries, pomegranate seeds, and feta in one big bowl.
03 - Pour the dressing on top and give it a gentle mix just before eating.

01 - Wait until serving to add dressing so the greens stay fresh.
02 - Store-bought or homemade candied pecans work great!
