Strawberry Bars (Print Version)

# Ingredients:

→ Crust

01 - 1/2 cup melted unsalted butter
02 - 1 1/2 cups of crushed graham crackers

→ Cheesecake Filling

03 - 8 oz cream cheese, softened
04 - 1/4 cup sour cream
05 - 2 eggs, room temp
06 - 1/2 cup granulated sugar
07 - 2 tsp of vanilla

→ Strawberry Compote

08 - 3 Tbsp water
09 - 2 tsp cornstarch
10 - 1 3/4 cups diced strawberries
11 - 5 Tbsp sugar
12 - 1/2 Tbsp lemon juice

→ Topping

13 - 1/4 cup melted white chocolate

# Instructions:

01 - Preheat oven to 350°F. Line a 9x9 baking dish with parchment and spray it lightly with oil.
02 - Combine melted butter with graham cracker crumbs, and press it snugly into the lined pan with the back of a measuring cup.
03 - Whip cream cheese, sugar, vanilla, and sour cream until creamy. Add eggs one by one, blending well each time.
04 - Spread the filling over the crust evenly and bake for 40-45 minutes until the middle is slightly wobbly and edges are a bit golden. Let it cool fully.
05 - Stir all compote ingredients over medium heat for 10 minutes. Keep stirring now and then. Chill in the fridge.
06 - Slice the chilled cheesecake into bars. Add small grooves on top and spoon in the compote. Drizzle the melted white chocolate over each piece.

01 - You can prep it the night before and chill it
02 - All ingredients work best when at room temperature
03 - Trim the edges to tidy up if you want it to look cleaner
