Preheat oven to 350°F. Line a 9x9 baking dish with parchment and spray it lightly with oil.

Combine melted butter with graham cracker crumbs, and press it snugly into the lined pan with the back of a measuring cup.

Whip cream cheese, sugar, vanilla, and sour cream until creamy. Add eggs one by one, blending well each time.

Spread the filling over the crust evenly and bake for 40-45 minutes until the middle is slightly wobbly and edges are a bit golden. Let it cool fully.

Stir all compote ingredients over medium heat for 10 minutes. Keep stirring now and then. Chill in the fridge.

Slice the chilled cheesecake into bars. Add small grooves on top and spoon in the compote. Drizzle the melted white chocolate over each piece.
