Slice the eggplant into cubes about an inch thick. Sprinkle extra kosher salt on top and let them rest for 15-30 minutes to remove extra moisture. Use paper towels to dry it off well.

Put the eggplant chunks into a bowl. Drizzle with avocado oil and sprinkle on the seasonings (thyme, rosemary, powdered garlic, smoked paprika, and 1/4 teaspoon salt). Mix thoroughly.

Heat up your air fryer to 400°F. Lay the seasoned cubes in the basket, making sure they’re in one even layer. Cook for 18 minutes, shaking the basket halfway to get an even crisp.

When they’re done, serve the eggplant immediately while it’s warm and crunchy. They’re great on their own or as a side with your favorite dish.
