Crispy Eggplant Airfryer (Print Version)

# Ingredients:

01 - 2 tablespoons avocado oil
02 - 1 large eggplant, peeled and chopped into square chunks about an inch in size

→ Seasonings

03 - 1/2 teaspoon powdered garlic
04 - 1/4 teaspoon kosher salt, plus extra for pre-salting
05 - 1 teaspoon dried thyme
06 - 1 teaspoon dried rosemary
07 - 1/2 teaspoon smoked paprika

# Instructions:

01 - Slice the eggplant into cubes about an inch thick. Sprinkle extra kosher salt on top and let them rest for 15-30 minutes to remove extra moisture. Use paper towels to dry it off well.
02 - Put the eggplant chunks into a bowl. Drizzle with avocado oil and sprinkle on the seasonings (thyme, rosemary, powdered garlic, smoked paprika, and 1/4 teaspoon salt). Mix thoroughly.
03 - Heat up your air fryer to 400°F. Lay the seasoned cubes in the basket, making sure they’re in one even layer. Cook for 18 minutes, shaking the basket halfway to get an even crisp.
04 - When they’re done, serve the eggplant immediately while it’s warm and crunchy. They’re great on their own or as a side with your favorite dish.

01 - Salting the eggplant first pulls out its bitterness and helps it crisp up better when cooking.
