Crispy Green Tomatoes (Print Version)

# Ingredients:

01 - 3 green tomatoes, medium and firm
02 - Sea salt (Kosher works too)

→ Breading Mix

03 - 1 tablespoon Cajun spices
04 - 1 cup plain flour
05 - 1 large egg (whisked)
06 - 1/3 cup finely-ground white cornmeal
07 - 1/2 cup dry breadcrumbs, finely crumbled
08 - 1/2 cup milk or tangy buttermilk

→ For Cooking

09 - 1/4 cup olive, canola, or peanut oil

# Instructions:

01 - Slice the unpeeled tomatoes to about 1/2 inch thick. Lightly salt each piece and leave them for 5 minutes.
02 - As the tomatoes sit, set up three bowls: First, mix flour with Cajun seasoning. In the next one, whisk the egg with milk. In the last, combine breadcrumbs and cornmeal.
03 - Warm up oil in a skillet over medium heat. Dip each tomato slice into the seasoned flour, run it through the egg mixture, and then cover it with the breadcrumb-cornmeal blend.
04 - Cook the coated tomato slices in batches, frying each side for 3 to 5 minutes until golden. Remove them and place on paper towels to soak up leftover oil.

02 - Pair with remoulade or a dash of hot sauce for a punch of extra taste.
