Denver Breakfast Bake (Print Version)

# Ingredients:

01 - 1 medium green bell pepper, diced
02 - 8 large eggs
03 - 1 medium yellow onion, diced
04 - 1 (16-ounce) bag of thawed frozen shredded hash browns
05 - 2 (8-ounce) ham steaks, diced into small cubes

06 - 1 cup whole milk
07 - 3/4 cup sour cream
08 - 2 ounces shredded sharp Cheddar cheese
09 - 4 ounces shredded spicy pepper Jack cheese

→ Seasonings and Oils

10 - 1 tablespoon vegetable oil
11 - 2 teaspoons kosher salt
12 - 1/2 teaspoon ground black pepper
13 - Cooking spray
14 - 2 teaspoons hot sauce

# Instructions:

01 - Set your oven to 350°F and generously spray a 9x13-inch dish to keep the food from sticking.
02 - Warm up oil in a big nonstick pan on medium-high heat. Sauté ham cubes, onion, and bell pepper until ham gets golden and onions turn see-through. This should take around 10 minutes.
03 - In a mixing bowl, combine hash browns, pepper Jack cheese, 1 1/2 teaspoons of salt, and 1/4 teaspoon of black pepper. Spread the mix evenly in the dish you prepared earlier.
04 - Evenly layer the cooked mixture of ham and veggies over the hash browns.
05 - Whisk eggs, milk, sour cream, hot sauce, and the rest of the salt and pepper. Pour this over the ham and hash browns. Sprinkle the Cheddar cheese on top.
06 - Cover it in foil and bake for 40 minutes. After that, remove the foil and bake for another 20 minutes until the center firms up. Let it cool for 10 minutes before serving.

# Notes:

01 - You can make this ahead, up to 12 hours, and chill it until baking.
02 - Works great for big gatherings.
03 - Store leftover portions in the fridge and just warm them up later.
