Easy Beef Burritos (Print Version)

# Ingredients:

01 - 1 ½ cups mashed refried beans or black beans
02 - 1 (1-ounce) packet of taco mix seasoning
03 - 6 large tortillas (10 inches each)
04 - 1 lb of lean minced beef
05 - 3 cups of already cooked rice
06 - 3/4 cup sweet corn kernels
07 - 1 ½ cups of shredded cheddar cheese

→ Extras for Toppings

08 - Chopped fresh cilantro
09 - Creamy avocado or guacamole
10 - Diced tomatoes or add some salsa
11 - Red onion, finely chopped
12 - Shredded lettuce leaves
13 - Cool, tangy sour cream

# Instructions:

01 - Set your oven to 350°F and grease a 9x13-inch dish with cooking spray.
02 - Cook your ground beef in a pan with taco seasoning as explained on the packet.
03 - Lay out tortillas and stack these fillings in the middle: 1/4 cup beans, 1/2 cup rice, cooked beef, 2 tablespoons of corn, and 1/4 cup cheese.
04 - Roll up each tortilla after folding the sides. Place them seam side down into the greased dish.
05 - Wrap the dish with foil and bake for about 25 minutes. If cold, expect them to take 30-35 minutes.

01 - Wrap individually in foil to freeze them for later use.
02 - If frozen, baking will take 45-55 minutes.
03 - Save time by using microwave-friendly rice.
