Eggs Cilbir Dish (Print Version)

# Ingredients:

→ Base

01 - 2 eggs
02 - 2 ounces (55g) butter
03 - 1 cup Greek or Turkish yogurt

→ Herbs & Seasonings

04 - A handful of fresh mint leaves
05 - A handful of fresh dill
06 - Salt and pepper as needed
07 - ½ garlic clove
08 - ½ teaspoon smoked paprika
09 - 1 teaspoon crushed chili flakes

→ Poaching

10 - 1 tablespoon of vinegar

# Instructions:

01 - Combine the yogurt with grated garlic, mint, and dill. Add some salt and pepper to balance the taste.
02 - Heat water and add vinegar. Stir to swirl water, then drop cracked egg into the middle. Let it sit for 3 minutes so the inside stays soft.
03 - Melt butter slowly, then blend in smoked paprika and chili flakes. Stir well as it heats.
04 - Lay down the yogurt on your dish, place eggs carefully on top, then drizzle over the butter mixture. Use herbs and a bit of pepper to dress it up.

# Notes:

01 - The fresher the eggs, the easier they are to poach.
02 - You can use sweet paprika if you'd rather skip the heat.
03 - Start light on garlic, then add more if you like.
