Take out the cores from your green apples and cut them up into little chunks. Try to move fast since the apples can start turning brown when they're exposed to air.

Toss the apple pieces, water, and honey into a big saucepan. Heat them until it boils, then lower the temperature and let it gently bubble. Stir now and then, squashing the apples with a spoon as they soften to get more juice out. Let it go for 15 minutes.

Turn off the heat and let the mixture sit until it's fully cooled. Use a fine-mesh sieve to drain the liquid into a container or bowl, pressing the leftovers lightly to get out all the juices. Dump the solids afterward.

Drop about 2-3 tablespoons of the apple syrup into a glass. Pour club soda or sparkling water on top, toss in ice to your liking, and gently mix everything together.
