Loaded Meatloaf Dish (Print Version)

# Ingredients:

→ Meatloaf Base

01 - 1 teaspoon salt
02 - ¼ cup finely chopped onion
03 - 1 tablespoon Worcestershire sauce
04 - ½ tablespoon black pepper
05 - ½ cup breadcrumbs
06 - 1 large egg
07 - 1 lb ground beef
08 - 1 teaspoon garlic powder
09 - ¼ cup milk
10 - ½ cup total ketchup (split in half for use)

→ Topping

11 - 1 cup shredded cheddar cheese
12 - 2 cups already-made mashed potatoes
13 - 2 tablespoons finely chopped chives or green onions (optional)
14 - 4 cooked bacon slices, crumbled up

# Instructions:

01 - Turn your oven to 375°F (190°C) to warm up. Coat a 9x9-inch baking pan lightly with oil or butter.
02 - Throw together the ground beef, breadcrumbs, onion, egg, milk, salt, pepper, garlic powder, Worcestershire sauce, and half your ketchup. Stir until combined.
03 - Push the beef mixture down into the pan evenly. Spread the rest of the ketchup all over. Cook in the oven for 20-25 minutes, making sure it’s done all the way through.
04 - After baking, slather mashed potatoes on top of the meat. Sprinkle on bacon and cheese.
05 - Pop the pan back in the oven for another 10-15 minutes, just until the cheese bubbles and melts.
06 - Add a bit of chopped green onion or chives for a pop of freshness if you'd like. Let things cool a bit, then dish it up.

01 - You can make it ahead of time and reheat.
02 - Try swapping the beef for ground turkey or chicken for a lighter dish.
