Lunchbox Mini Pizzas (Print Version)

# Ingredients:

→ Dough

01 - 1 cup (250g) Greek yogurt, plain and full-fat
02 - 2 cups (300g) self-raising flour

→ Toppings

03 - 1 cup (125g) shredded mozzarella cheese
04 - ⅓ cup (90g) thick tomato paste
05 - ½ cup (80g) sliced pepperoni pieces

# Instructions:

01 - Turn your oven on to 200°C (400°F) or 180°C (350°F) if you’re using a fan setting. Set up a baking tray with a layer of parchment paper.
02 - Grab a large bowl and toss in the flour and yogurt. Use a spoon to stir until the mixture comes together like big flakes. Then, knead with your hands for about a minute or two until it’s smooth and soft.
03 - Sprinkle some flour on your counter. Flatten the dough to about 1 cm (1/2 inch) thick using a rolling pin. Cut out circles with a big cup or cookie cutter. Squash the leftover bits together and repeat until you’ve used it all.
04 - Set the dough circles onto the lined baking tray. Spread a layer of tomato paste over each one. Add a handful of mozzarella, then finish with some pepperoni slices.
05 - Pop the tray in the oven for 12–14 minutes, or until the cheese is bubbling and the base has turned golden. Let them cool down a bit right on the tray before you dig in.

01 - Use plain flour and baking powder as a backup for self-raising flour
02 - Freezes well for meal planning
03 - Great to enjoy either cold or warm
