Monte Cristo Bennigan's (Print Version)

# Ingredients:

→ Sandwich

01 - 9 thick slices of honey ham
02 - 3 slices of Swiss cheese
03 - 3 slices of mild cheddar cheese
04 - 9 slices of roasted turkey, thick cut
05 - 9 pieces of honey wheat bread

→ Batter

06 - 2 beaten large eggs
07 - 2 tablespoons of baking powder
08 - 3 cups (375g) of all-purpose flour
09 - 2⅔ cups of water
10 - Half a teaspoon of kosher salt
11 - Vegetable or canola oil for frying
12 - ½ cup (62.5g) powdered sugar

→ Dipping Sauce

13 - Honey mustard (optional)
14 - Raspberry preserves

# Instructions:

01 - Take a slice of bread, layer with Swiss cheese and turkey, another slice of bread, then some ham and cheddar, finishing with a third slice on top. Wrap it tight in plastic, cut diagonally, and chill for a few hours.
02 - Mix your flour, salt, and baking powder in one bowl. Stir water and eggs in another, then whisk together until smooth and lump-free.
03 - Fill a big pot with two inches of oil and heat it up to reach 325-350°F.
04 - Coat the sandwich halves in batter and fry them for 4-5 minutes till they’re crispy and golden. Lay them down on paper towels to soak up excess oil.
05 - Sprinkle powdered sugar over the top and enjoy with raspberry preserves, or try adding honey mustard if you'd like.

# Notes:

01 - You can swap in premade pancake mix instead of making batter.
02 - Chilling keeps everything held together during frying.
