Naan Chicken Wraps (Print Version)

# Ingredients:

→ Wrap Essentials

01 - 1 small tub of roasted red pepper hummus (about 1 cup)
02 - 3 cups of pre-cooked, shredded chicken
03 - 4 rounds of naan flatbread
04 - 4 handfuls of fresh spring greens
05 - 4 big spoonfuls of crumbled goat or feta cheese

→ Veggie Medley

06 - A half cup of diced, skinned cucumber
07 - 1/2 cup of chopped red onion (peeled first!)
08 - 1 small bowl of halved cherry tomatoes (1 cup)
09 - Around 1/4 cup of homemade red wine dressing (adjust as needed)

→ Toppings

10 - A drizzle of olive oil over the top
11 - Sea salt and cracked pepper (to sprinkle generously)
12 - About 1 1/2 teaspoons of extra vinaigrette per wrap

# Instructions:

01 - Put naan in your toaster oven or under low broil for a couple of minutes on each side till just toasted.
02 - In a big mixing bowl, toss together the cucumbers, tomatoes, and onions. Add a splash of your vinaigrette and stir well.
03 - Start by spreading hummus on each naan. Add the greens, followed by the chicken, and then the veggie mix. Sprinkle cheese over everything.
04 - Finish off with a splash of vinaigrette, some cracked pepper, a pinch of salt, and a light drizzle of olive oil. Serve right away or tie them up snugly for later.
