Shrimp Orzo Dish (Print Version)

# Ingredients:

01 - 1 cup orzo, uncooked
02 - 1/3 cup dry white wine or broth with a splash of vinegar
03 - 4 tablespoons butter, used in stages
04 - 5 garlic cloves, sliced thin
05 - 1 lemon
06 - 2 tablespoons extra-virgin olive oil, split into portions
07 - 1 lb of peeled, deveined large shrimp
08 - 1/3 cup minced shallots
09 - A pinch of crushed red chili flakes

→ Herbs & Seasonings

10 - Kosher salt
11 - Freshly ground pepper
12 - 2 tablespoons fresh chives, finely chopped
13 - 1/4 cup parsley, finely chopped

# Instructions:

01 - Mix shrimp with olive oil, zest from the lemon, garlic, salt, and a little pepper.
02 - Sear shrimp for about 3 minutes in butter till they turn solid white. Scoop them into a dish.
03 - Toast orzo for a minute in oil and butter while stirring in chili flakes, shallots, and garlic. Pour in the wine and let it cook down.
04 - Add water and let it gently bubble away, uncovered, until the orzo is just soft and the water is gone. This will take around 12 minutes.
05 - Spread shrimp back in the pan with half the herbs, then drizzle lemon juice, olive oil, and top with all the remaining herbs and some pepper.

# Notes:

01 - Store in the fridge up to 3 days.
02 - Mix in liquid to moisten the orzo when warming up again.
03 - Squeeze extra lemon juice after you've reheated it.
