One Pan Chicken Dish (Print Version)

# Ingredients:

01 - 1 1/4 cups (315 ml) steaming hot water
02 - 2 tbsp (30g) butter or olive oil
03 - 5 chicken thigh fillets (bone-in), no skin
04 - 2 whole garlic cloves, finely chopped
05 - 1 onion, diced (white, yellow, or brown)
06 - 1 1/2 cups (375 ml) heated chicken stock
07 - 1 1/2 cups (270g) uncooked white rice

→ Chicken Seasoning

08 - 1 tsp paprika
09 - 1/2 tsp garlic powder
10 - 1 tsp dried thyme
11 - A sprinkle of black pepper
12 - 3/4 tsp salt
13 - 1/2 tsp onion powder

→ Toppings (Optional)

14 - Freshly chopped parsley or thyme leaves
15 - A quick spray of cooking oil

# Instructions:

01 - Set your oven to 180°C or 350°F to preheat.
02 - Spread out the chopped garlic and onion in a baking pan (about 25x35 cm or 10x15 inches). Pop the butter in the middle and let it bake for 15 minutes. If any bits start to burn, give it a stir at the 12-minute mark.
03 - While that’s baking, combine all the Chicken Seasoning ingredients. Coat both sides of your chicken pieces with the mix.
04 - Take the dish out of the oven and add the rice. Stir it all together.
05 - Place the chicken pieces right on top of the rice. Carefully pour in the warm water and chicken stock around the edges.
06 - Cover the dish with foil and bake for 30 minutes. Then, take off the foil, spray the chicken with oil (optional, for a touch of crispiness), and bake for 20 more minutes or until there's no liquid left.
07 - Let it sit for 5 minutes. Take out the chicken, fluff the rice with a fork, and top with thyme or parsley if you like. Serve and enjoy your meal!

01 - It’s flavorful enough to eat without extras, but you can make a quick gravy in just 4 minutes for an extra treat.
02 - For smaller portions, grab a smaller pan. For bigger batches, divide into multiple dishes for even cooking.
03 - Swap the chicken seasoning for alternatives like Italian herbs or lemon pepper if you prefer.
04 - Using boneless, skinless thighs or breasts? Start baking the rice by itself (cover with foil). After 30 minutes, remove foil, add chicken on top, and bake without foil another 20-25 minutes.
05 - For brown rice, increase hot water by 1/2 cup. Keep foil on and bake for 1 hour, then uncovered for 15 minutes until tender.
