05 - 1/2 cup Parmesan, finely grated

07 - 1 teaspoon dried herbs (Italian blend)
08 - Pinch of salt and black pepper
09 - Frying oil (like vegetable or canola)

→ To Serve

10 - Dip with marinara sauce

# Instructions:

01 - Cook tortellini to a firm texture (al dente) following the package guide. Drain and let them air dry on paper towels.
02 - Grab three shallow dishes: add flour to the first, beat eggs in the second, and mix Parmesan, breadcrumbs, and seasonings in the last one.
03 - Roll tortellini in flour first, dip next in eggs, and finally cover them with breadcrumb mix, pressing gently to stick it on.
04 - In a large pan, warm up oil to 350°F. Fry tortellini a few at a time for 2-3 minutes per side, flipping once they turn golden and crispy.
05 - Place fried tortellini on paper towels. Sprinkle with some extra Parmesan, if you're into it, and serve warm alongside marinara.

# Notes:

01 - Tastes best right after frying while crisp and warm
02 - Use refrigerated or fresh tortellini, not dried ones
03 - Reheat in the oven to make them crispy again
