Cook tortellini to a firm texture (al dente) following the package guide. Drain and let them air dry on paper towels.

Grab three shallow dishes: add flour to the first, beat eggs in the second, and mix Parmesan, breadcrumbs, and seasonings in the last one.

Roll tortellini in flour first, dip next in eggs, and finally cover them with breadcrumb mix, pressing gently to stick it on.

In a large pan, warm up oil to 350°F. Fry tortellini a few at a time for 2-3 minutes per side, flipping once they turn golden and crispy.

Place fried tortellini on paper towels. Sprinkle with some extra Parmesan, if you're into it, and serve warm alongside marinara.
