Start with butter and cream cheese. Blend until creamy, then add powdered sugar and vanilla. Pour in milk little by little until it’s the right thickness.

In a big bowl, toss in the flour, sugar, salt, baking soda, and baking powder. Stir it all together.

Push the dry mix aside to form a pocket. Crack in the egg, pour in milk, drizzle oil, then include food coloring. Stir lightly. Add sprinkles last if using.

Spoon out batter (1/4 cup per pancake) onto a hot pan over medium heat. Wait for bubbles (about 2 mins), then flip and cook another 1-2 mins till golden.
