Turn your oven to 425°F and get a big baking pan (15x21) ready by lining it with parchment paper. Two smaller sheets work too.

Peel off the skins and chop the sweet potatoes into ½-inch cubes. If it wobbles, trim a thin piece from the base to steady it, then slice into ½-inch rounds before cubing.

Lay the cubes on the pan and mix them with your olive oil, maple syrup (if using), and all the spices.

Make sure the sweet potato chunks are in a single layer with nothing overlapping or crowding.

Bake at 425°F for about 25-35 minutes. Flip those cubes halfway through at the 15-minute mark.
