Saucy Noodles Quick Fix (Print Version)

# Ingredients:

→ Noodles

01 - 140g total (roughly 2 portions) of dried instant ramen noodle cakes

→ For Cooking

02 - 10 ounces of extra firm tofu, sliced vegetables, or mushrooms (pick your favorite)

→ Sauce Ingredients

03 - 1 cup vegetable broth or plain water
04 - 5 to 7 tablespoons of soy sauce (adjust to taste)
05 - 1 1/2 teaspoons dark soy sauce (optional for extra color)
06 - 2 to 3 tablespoons of cornstarch
07 - 1 to 3 tablespoons of sugar, maple syrup, or any liquid sweetener you like
08 - 2 tablespoons of white vinegar, rice vinegar, or even lemon juice
09 - 1/4 teaspoon of black pepper
10 - 1/2 tablespoon of chili garlic sauce (optional for added heat)
11 - 1 tablespoon sesame oil
12 - 2 garlic cloves, chopped finely (optional)

→ Toppings

13 - Green onions, sliced
14 - Toasted sesame seeds

# Instructions:

01 - Combine all the sauce ingredients in a bowl (use water or broth, soy sauces, cornstarch, sweetener, vinegar, ground pepper, chili garlic sauce, sesame oil, and garlic). Whisk or stir until completely smooth, then adjust the flavors if needed. Keep it close for later.
02 - Bring a pot of water to a boil and cook the noodle cakes until they’re a bit underdone—about 2–3 minutes less than the package says. Drain them well, giving them a quick rinse with cold water if you want to stop the cooking.
03 - Warm some oil in a frying pan over medium-high heat. Toss in your tofu, veggies, or mushrooms and cook thoroughly, stirring occasionally, until they’re browned or tender.
04 - Stir the sauce again to make sure it’s still smooth. Pour it onto the veggies or tofu in the pan and cook on medium heat, stirring constantly. Let it simmer for a couple of minutes so it thickens up.
05 - Add your noodles to the pan with the sauce and mix well until every strand of noodle is coated. Cook for a few more minutes on medium until the sauce clings to the noodles and thickens up a bit more.
06 - Take a moment to adjust the flavors if needed. Sprinkle some sesame seeds and green onions over the top. Serve right away while it’s warm and tasty.

# Notes:

01 - Consider making double the sauce if you’re adding extra tofu or lots of veggies so everything gets enough flavor.
02 - If you’re using veggie broth, go lighter on the soy sauce, as broth tends to be salty.
