Simple Tuna Wrap Melt (Print Version)

# Ingredients:

→ Filling

01 - 1 tablespoon freshly squeezed lemon juice (about half a lemon)
02 - 1/4 cup chopped red onion
03 - 1 can (5 oz) light tuna, either yellowfin or skipjack
04 - 1/4 cup sweet corn kernels
05 - 2 tablespoons plain Greek yogurt
06 - 1 tablespoon capers or dill relish
07 - 1/2 teaspoon garlic powder
08 - 1/2 tablespoon Dijon mustard
09 - 1/4 teaspoon ground black pepper

→ Wrap and Extras

10 - Olive oil for frying
11 - 1/4 cup grated mozzarella cheese
12 - 1 oversized tortilla, at least 10 inches wide

# Instructions:

01 - Grab a bowl and toss in the tuna (drain it first) along with yogurt, mustard, lemon juice, corn, onion, capers, garlic powder, and pepper. Stir well.
02 - Heat the wrap a bit until soft. Sprinkle cheese and scoop the tuna mix over it. Don't spread too close to the edges.
03 - Tuck the sides in, fold the bottom upwards, and roll it up tightly away from you.
04 - Using a skillet with oil, cook the wrap on medium heat for 3-4 minutes each side. Watch for a golden color and the cheese to melt.
