Soft Cookie Bars (Print Version)

# Ingredients:

→ Cookie Bars

01 - ½ cup sour cream at room temp (full-fat)
02 - 2½ cups plain all-purpose flour
03 - 1½ cups white sugar
04 - 1 big egg, room temp
05 - 1 tablespoon fresh lemon juice
06 - 2 sticks (8 ounces) softened butter, unsalted
07 - ½ teaspoon kosher salt
08 - 2 teaspoons vanilla extract

→ Frosting

09 - 1 teaspoon vanilla
10 - 1 dash of kosher salt
11 - ¼ cup fun rainbow sprinkles (optional)
12 - 1 stick (4 ounces) unsalted butter
13 - A couple of drops of food coloring (optional)
14 - 2 cups powdered sugar

# Instructions:

01 - Preheat oven to 350°F and prep your 9x9-inch pan with parchment paper. Let the butter, egg, and sour cream sit out to warm up.
02 - Whip the butter and sugar together until fluffy. Toss in the sour cream, egg, lemon juice, vanilla, and salt. Add the flour gently and mix until it just comes together. Spread into the pan evenly.
03 - Bake for about 30-35 minutes, until it turns a golden color. Let it cool in the pan for 10 minutes, then transfer to a rack to cool off fully.
04 - Blend the butter and salt until smooth and creamy. Mix in the vanilla, then slowly add the powdered sugar. If you’d like, stir in a little food coloring for fun.
05 - On the cooled bars, spread the frosting. Sprinkle on the sprinkles if you'd like. Allow it to set for a half hour or chill for 20 minutes. Slice into 16 pieces after.
