Spicy Shrimp Bites (Print Version)

# Ingredients:

→ Shrimp

01 - 1 pound of peeled, medium-sized shrimp (around 25 pieces), deveined
02 - Salt and black pepper, adjust to your taste
03 - 1/2 cup of corn starch for dredging
04 - 2 beaten large eggs to coat shrimp
05 - 1/4 cup oil for frying (like canola)

→ Sauce

06 - 1/2 cup of sweet chili garlic sauce (store-bought works great)
07 - Juice from 3 tablespoons of a freshly squeezed lemon
08 - 2 tablespoons of honey for sweetness
09 - Zest from 1-2 lemons (adjust to preference)
10 - 1/2 teaspoon of Sriracha for heat
11 - A small pinch of freshly grated ginger, about 1/2 teaspoon
12 - 1/2 teaspoon garlic salt

# Instructions:

01 - Pour the oil into a big pan and get it hot over medium-high heat.
02 - Sprinkle salt and pepper on shrimp. Roll them in cornstarch first, and then dip them in the egg wash right before you cook them.
03 - In small groups (about 4-6), fry the coated shrimp until a golden crust forms. This takes around 2-3 minutes per batch. Let them rest on paper towels after frying.
04 - Wipe the pan clean and toss all the sauce ingredients in. Let the mixture come to a bubbling boil over medium-high heat for a couple of minutes.
05 - Toss the cooked shrimp in the sauce until well-coated. Serve right away with a side of rice or veggies.
