Spinach Three Cheese Pie (Print Version)

# Ingredients:

→ Foundations

01 - One ready-to-use pie crust
02 - 1½ cups of ricotta cheese
03 - 2 cups fresh spinach, chopped (or 1 cup thawed frozen spinach)

→ Egg Blend

04 - Three large eggs
05 - 1 cup shredded mozzarella cheese
06 - Half a cup of heavy cream
07 - ⅓ cup Parmesan, finely grated

→ Flavors & Add-ins

08 - 1 tablespoon olive oil
09 - 2 garlic cloves, minced
10 - Half of a finely chopped onion
11 - A pinch of salt and a sprinkle of pepper
12 - Optional: ¼ teaspoon nutmeg
13 - 1 tablespoon of fresh herbs, chopped (optional)

# Instructions:

01 - Heat olive oil in a pan, then sauté chopped onion until tender. Stir in garlic and let it cook briefly before adding spinach. Allow it to wilt, then set it aside to cool.
02 - Beat eggs, ricotta, Parmesan, and cream together. Add a pinch of salt, pepper, and nutmeg for flavor.
03 - Take the cooled spinach mixture and gently stir it into the egg mixture. Toss in the fresh herbs and mozzarella if you’re using them.
04 - Pour the prepared filling into the pie crust. Slide it into a 375°F oven and bake for 45-50 minutes until the top looks golden and the center is firm. Set it aside to cool for 10 minutes before serving.

# Notes:

01 - Use homemade crust if preferred, or store-bought for ease
02 - If edges darken too quickly, cover them with foil
03 - Tastes great warm or at room temperature
