Sweet Crust Banana Loaf (Print Version)

# Ingredients:

→ Bread

01 - 6 bananas, mashed up
02 - 2 large eggs
03 - 1 cup (200g) sugar
04 - ⅓ cup (75g) softened butter
05 - ¼ cup (61g) milk
06 - 2 cups (250g) flour
07 - 2 teaspoons baking powder
08 - ½ teaspoon baking soda
09 - ½ teaspoon kosher salt
10 - 1 tablespoon cinnamon

→ Topping

11 - 1 teaspoon cinnamon
12 - 2 tablespoons sugar

# Instructions:

01 - Set your oven to 350°F and grease a 9-inch pan.
02 - In a large bowl, stir butter, milk, and sugar together. Add in the bananas and eggs.
03 - In a separate bowl, mix the flour, soda, powder, salt, and cinnamon.
04 - Gently stir the dry mix into the wet stuff until it just comes together.
05 - Pour the mix into the pan. Combine the topping sugar with cinnamon and sprinkle it over. Bake for 1 hour until a toothpick shows just a few crumbs sticking.

01 - Don’t go overboard with stirring the batter.
02 - Test if it’s done by sticking a toothpick in.
