Taco Style Sweet Potatoes (Print Version)

# Ingredients:

→ Sweet Potato Prep

01 - Two medium-sized sweet potatoes
02 - A bit of olive oil for coating
03 - Season with salt and pepper

→ Taco Mixture

04 - 1 lb ground beef
05 - Half a white onion, diced
06 - 2 minced garlic cloves
07 - One 14.5-ounce can of fire-roasted diced tomatoes, don't drain
08 - 1 tbsp of chili powder
09 - 1 tsp of ground cumin
10 - 1 tsp of smoked paprika
11 - 1/2 tsp garlic powder
12 - 1/2 tsp onion powder
13 - 1/2 tsp table salt
14 - 1/2 tsp black pepper

→ Extras for Topping

15 - Creamy guacamole
16 - Shredded sharp cheddar
17 - Pico de gallo
18 - A dollop of sour cream

# Instructions:

01 - Set oven to 425°F and line a baking sheet. Clean and dry sweet potatoes well. Prick them with a fork, coat in oil, and sprinkle salt and pepper.
02 - Roast in the oven for about 40-45 minutes until inside is tender and creamy.
03 - Warm some olive oil over medium heat. Soften onions and garlic in the pan.
04 - Toss in the ground beef and spices. Cook for a few minutes until browned. Mix in tomatoes and simmer till the liquid cooks off, around 5-7 minutes.
05 - Cut the baked potatoes open, fluff the insides with a fork, and fill them with the meat mix. Add any toppings you like!
