03 - 1/2 teaspoon salt, adjust to taste
04 - 1 pound ground beef
05 - 1 green pepper, chopped (around ¾ cup)
06 - ½ cup long-grain rice, raw
07 - 1 teaspoon chili seasoning

10 - 2 cups canned tomatoes with their juices (16 ounces)
11 - 1 cup shredded cheddar cheese (optional use)

03 - Cover the pan or transfer to a baking dish, then cover with foil or an oven-safe lid.
04 - Set your oven to 375ºF and bake covered for 35-45 minutes until the rice is fully cooked.
05 - Fluff the rice using a fork. If you'd like, sprinkle with shredded cheese before serving. Store leftovers in a sealed container.

# Notes:

01 - Yields about 5 cups
02 - Keep leftovers sealed tight in a container
