Slice zucchini into sticks about 2-3 inches long and ½-inch thick. Cut onion into quarters, then slice into chunks about ½-inch wide.

In a wok or large pan, heat some vegetable oil over medium-high heat until it starts to shimmer.

Cook the onion pieces for around 2 minutes until they soften. Toss in the garlic and ginger, stirring for about half a minute.

Add the zucchini pieces and stir-fry them for 4 to 5 minutes, letting them brown slightly while stirring every now and then.

Pour in soy sauce, sesame oil, sesame seeds, salt, and pepper. Cook for another minute until everything’s tender with a bit of crisp.
