Stuffed Zucchini Boats (Print Version)

# Ingredients:

01 - 1 teaspoon finely chopped garlic
02 - ½ cup mushrooms, sliced up
03 - Cooking spray for pan
04 - Seasonings that suit your taste
05 - 2 medium-sized zucchini
06 - 2 cups fresh spinach (or ¼ cup frozen)
07 - ½ cup ricotta cheese, lower fat

# Instructions:

01 - Slice zucchini down the middle and scoop out the seeds inside.
02 - Heat a pan that’s been sprayed, cook mushrooms first, then toss in spinach and garlic for the last few minutes.
03 - Take off heat, then stir in the ricotta cheese to combine everything.
04 - Spoon the spinach-mushroom mix into the hollow zucchini and bake them at 350°F for around 6 to 8 minutes.
