Easy Breakfast Burritos (Print Version)

# Ingredients:

→ Main Items

01 - 12 large burrito tortillas
02 - 8 ounces of shredded cheddar
03 - Salt and black pepper for seasoning
04 - 1 large yellow onion
05 - 2 tablespoons of butter (split into parts)
06 - 1 pound of pre-cooked ham
07 - 1 bell pepper
08 - A dozen eggs

# Instructions:

01 - Chop up the onion and bell pepper. Grate the cheddar cheese if it’s not done yet.
02 - Cook the diced bell pepper and onions in 1/2 tablespoon of butter until they’re nice and soft. Don’t forget to season them! Once done, move them to a dish.
03 - Cut up the ham and cook it in another 1/2 tablespoon of butter. Let it brown a bit, then set it aside in a bowl.
04 - Whisk together the eggs and cook them in the rest of the butter. Keep the heat medium, and stop when the eggs are just starting to set but still creamy. Add some seasoning at the end.
05 - Start with a tortilla. Lay down eggs, veggies, ham, and cheese. Fold the bottom up first, then the sides, and roll it up tight.
06 - Wrap each roll with parchment paper. Mark them, then seal them in freezer bags to store.

# Notes:

01 - Reheats well straight from the freezer
02 - If you plan ahead, defrost overnight—it turns out better
03 - Mix things up by adding your favorite fillings
