Mini Cheesecake Jars (Print Version)

# Ingredients:

→ Crust

01 - 1/3 cup of melted butter
02 - 1 1/2 cups crushed graham crackers (around one sleeve)

→ Cheesecake Filling

03 - 14-ounce can of sweetened condensed milk
04 - 24 ounces of softened cream cheese
05 - 2 teaspoons pure vanilla extract
06 - 4 large eggs
07 - 1/4 teaspoon lemon extract for flavor

→ Strawberry Sauce

08 - 1/2 cup of water
09 - Three tablespoons cornstarch
10 - 1/2 cup sugar (granulated)
11 - 16 ounces of ripe strawberries
12 - 1 tablespoon fresh lemon juice

# Instructions:

01 - Stir the crushed crackers with the melted butter. Spoon around a tablespoon into each jar, pressing down firmly for a base.
02 - Start by whipping the cream cheese till creamy, then gradually blend in condensed milk. Gently add eggs and extracts, mixing just enough to combine.
03 - Pour the filling into jars, leaving a little space from the top. Bake at 300°F for about 20 to 25 minutes or until firm.
04 - Toss all sauce items into a pot and bring to a gentle boil. Smash the berries to your preferred texture as it cooks.
05 - Let cheesecakes cool on the counter, then refrigerate for at least an hour. Add strawberry topping before serving.
